Nana used to make the best lamingtons in the world. She knew exactly how to get the balance spot-on so that they were light and fluffy, yet leave you with a satisfied feeling.
When I had a crack at doing it in the studio yesterday things didn't exactly go according to plan but that doesn't mean you won't be able to get em perfect!
So, here's Nana Dillon's recipe for you to try at home!
Ingredients
- 1 slab sponge cake (one day old)
- 4 cups icing sugar
- 1/3 cup unsweetened cocoa powder
- 2 tablespoons butter
- 1/2 cup milk
- 2 - 3 cups desiccated coconut
To make the icing
Make sure the cake is cool by putting it in the fridge or freezer for at least half an hour, then cut into squares or fingers. After combining the sugar and cocoa in a large bowl, heat the milk and butter in a saucepan until the butter is melted. Add to the sugar/cocoa mixture and mix to a fluid yet not runny consistency.
To put it all together
Make a production line of squares or sponge fingers, have the chocolate icing mixture in a bowl, with the coconut in a shallow container or on a plate, and a cooling rack with paper underneath to catch all the drips. (Or, judging in yesterday's performance, just invite Ali around she couldn't get enough of the choccy mix!)
Using a fork dip the sponge into the icing, then roll it in the coconut to cover it well, and then place on to the rack to dry.
Once they have dried, place in an airtight container and leave to "mature" for at least a few hours, preferably overnight, before eating.
