The 'Fast and the Furious' Fritatta is simple, healthy, and most of all, delicious. Great for dinner, lunch or even breakfast and only takes thirty minutes or so, its a must have in your culinary repertoire
Ingredients
  • 1 x tsp butter
  • 8 eggs, whisked
  • 1 x tsp apple cider vinegar
  • 80g cream cheese
  • 100g feta
Choice of veggies and herbs:
  • 1  small onion, finely chopped
  • 1/2 red capsicum, finely chopped
  • 1 x zucchini, shredded
  • Bunch of broccolini, cut into chunks
  • Parsley, torn up with your hands

Method

  1. Preheat the oven to 190 degrees Celsius
  2. Fry the onion up in the butter, whilst steaming the broccolini, in a shallow large frying pan, on medium heat
  3. Meanwhile, steam the broccolini for just a few mins so it is still crunchy and has a snap to it
  4. Once the onion is golden, throw in the capsicum, zucchini and brocollini and fry for 1-2 mins
  5. Whilst doing so, whisk the eggs with the apple cider vinegar, and then add to your veggies in the pan making sure to have an even spread
  6. Spread some dollops of feta and cream cheese across the pan, and heat for 4-5 mins until the top layer is still liquid-ey.
  7. Sprinkle over the parsley, then transfer to the oven for 5-10 minutes to get a crispy finish
